VIRAL ONE-PAN DUMPLING BAKE

This is one of those dinners that feels like you did way more than you actually did. Everything goes into one pan, the oven does the work, and you end up with dumplings sitting in a rich, creamy coconut red curry sauce that soaks into every bite.

If you need an easy weeknight dinner, this one checks all the boxes. Minimal prep, amazing flavor, and it feeds the family without a pile of dishes waiting for you afterwards. The dumplings steam first, then crisp up just enough on top, while the sauce is something you’ll definitely want to spoon over rice or noodles.

It’s flexible too. Use whatever dumplings you have in the freezer, swap the veggies, adjust the heat level with more or less chili crisp, and make it yours. The kind of recipe you keep coming back to because it just works.

INGREDIENTS:

  • 1 can full fat coconut milk (14 oz)

  • 2½ tablespoons red curry paste

  • 2 tablespoons soy sauce

  • 2 teaspoons fish sauce

  • 2 teaspoons rice vinegar

  • 1 tablespoon honey or brown sugar

  • 1 teaspoon sesame oil

  • 2 cloves garlic, grated

  • 1 teaspoon fresh or freeze dried ginger, grated

  • 2 cups chopped bok choy

  • 1 red bell pepper, sliced

  • 16 to 20 frozen dumplings

  • Oil spray or a little avocado oil

For serving

  • Sliced green onions

  • Cilantro

  • Chili crisp

  • Lime wedges

  • Jasmine rice or noodles

DIRECTIONS:

  1. Preheat oven to 400°F.

  2. Add coconut milk, curry paste, soy sauce, fish sauce, rice vinegar, honey, and sesame oil to a baking dish and whisk until smooth.

  3. Stir in garlic and ginger.

  4. Add bok choy and red bell pepper and toss to coat.

  5. Arrange dumplings on top in a single layer. Press them lightly into the sauce and spoon a bit of sauce over top.

  6. Cover tightly and bake 20 minutes.

  7. Remove cover, lightly spray or brush dumplings with oil, and bake another 8 to 10 minutes until bubbling.

  8. Broil 1 to 2 minutes for a little color, watching closely.

  9. Let sit 5 minutes, squeeze over fresh lime, then garnish and serve over rice or noodles.
