ONE-PAN BEEF AND POTATO SKILLET (30-Minute Meal)

INGREDIENTS
1 lb lean ground beef
2 tbsp bacon grease or olive oil
1 medium onion, diced
1 red bell pepper, diced
1 poblano pepper, diced (optional but so good)
4 cloves garlic, minced
3 medium yellow potatoes, diced into ½-inch cubes
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
1/2 tsp dried oregano
3/4 tsp cumin
1 tbsp tomato paste
3/4 cup beef broth
1 tsp Worcestershire sauce
1 can corn niblets, drained
1/2 cup shredded cheddar or a mix of cheddar and mozzarella
2 tbsp parsley (for garnish)
DIRECTIONS
1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 8–10 minutes, stirring now and then, until they start to brown and soften. Remove them from the skillet and set aside.
2. Add the remaining tablespoon of olive oil and the ground beef to the same skillet. Cook, breaking it apart, until browned (about 5–6 minutes). Drain extra grease if needed.
3. Add the onion, red bell pepper, and garlic. Cook for 3–4 minutes, stirring occasionally, until the veggies soften.
4. Stir in salt, pepper, smoked paprika, oregano, and cumin. Add tomato paste and Worcestershire sauce, mixing well to coat everything. Pour in beef broth, then add the potatoes and corn. Stir, cover, and let simmer for 5 minutes so the flavors come together.
5. Sprinkle cheese on top, cover, and let it melt for 2 minutes. Garnish with parsley and serve hot.
