30-MINUTE HOME-MADE SPAGHETTIOS
Skip the can and make these cozy, homemade SpaghettiOs instead. Creamy, tomatoey, and full of nostalgia, this quick one-pot meal brings childhood comfort to your kitchen…without the nonsense ingredients. Perfect for hungry kids, busy weeknights or when you just need a little bowl of comfort.
Serves 4
INGREDIENTS
2 tablespoons tomato paste
4 tablespoons butter
1 teaspoon Italian seasoning
1 teaspoon garlic powder
⅓ teaspoon onion powder
1 teaspoon salt
¼ teaspoon freshly cracked black pepper
1 (8-ounce) can tomato sauce
2 cups chicken stock
2 cups water (you may not need all)
2 cups anellini pasta rings
¼ cup heavy cream
¼ cup grated Parmesan
Pinch of sugar
DIRECTIONS
1. Add tomato paste, butter, Italian seasoning, garlic powder, onion powder, salt, and pepper to a large pot. Cook over medium heat until the butter melts, about 4 to 5 minutes.
2. Stir in the tomato sauce, chicken stock, and 1½ cups water. Bring to a boil.
3. Add the pasta and reduce the heat to medium. Cook, stirring often, until the pasta is tender and the sauce has thickened, about 15 to 20 minutes. Add more water as needed, ½ cup at a time, if the sauce thickens before the pasta is done.
4. Stir in the heavy cream and Parmesan if using.
5. Taste and adjust seasonings to your taste preference. Add a pinch of sugar if desired.
6. Serve warm with extra Parmesan if desired.
