MEXICAN FIESTA ROASTED POTATOES
Warning: These potatoes might outshine the main dish.
Crispy, spicy, and roasted to perfection these fiesta potatoes are the side you didn’t know you needed.
Perfect with tacos, bowls, or just straight off the pan.
Super simple and very affordable.
INGREDIENTS:
6 medium potatoes, cut into 1” cubes
1 onion, chopped
1 bell pepper, chopped
2 tbsp olive oil or melted tallow
1 tsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ancho chili powder (or cayenne)
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp dried parsley
DIRECTIONS:
1. Preheat oven to 400°F
2. Toss potatoes, onions and bell peppers with oil and all seasonings in a large bowl.
3. Spread them out on a baking sheet in a single layer.
4. Bake for 30–35 minutes, until crispy and golden. Garnish with chopped parsley if desired.
5. Serve hot.
