EASY WHITE LASAGNA (w/chicken) SOUP
This white lasagna soup is cozy, filling, and deliciously satisfying. Shredded chicken, broken lasagna noodles, kale or spinach, and a creamy broth all come together in one pot for a meal that feels comforting without being complicated. It’s great for busy weeknights, feeds a crowd easily, and always disappears fast at family dinners or potlucks. INGREDIENTS
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 tsp roasted garlic powder (regular works too)
2 to 3 cups cooked shredded or cubed chicken breast
6 cups chicken broth
8 ounces lasagna noodles, broken
6 to 8 ounces cream cheese, softened
1 cup heavy cream
2 cups fresh spinach or kale (frozen works too!)
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 tsp Worcestershire sauce (adds umami!)
2 tsp chicken bouillon
1/4 - 1/2 tsp red chili flakes
Salt and pepper to taste
DIRECTIONS
1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent.
2. Add the garlic and Italian seasoning and cook for 1 minute until fragrant.
3. Stir in the shredded chicken and cook for 1 to 2 minutes just to warm it through.
4. Pour in the chicken broth, chicken bouillion, Worcestershire sauce, red chili flakes, roasted garlic powder and bring to a gentle simmer.
5. Add the broken lasagna noodles to boiling salted water and cook until tender, about 8 to 10 minutes, stirring occasionally. Drain and set aside.
6. Lower the heat and add the softened cream cheese in small pieces, stirring until completely melted and smooth.
7. Stir in the cooked lasagna noodles, heavy cream and spinach or kale, allowing it to wilt.
8. Remove from heat and stir in the mozzarella and Parmesan until melted and creamy.
9. Season with salt and pepper to taste and serve hot.
