EASY HAM, TOMATO & SPINACH QUICHE
This Ham Spinach & Tomato Quiche easily won over a few of our less than enthusiastic family members. It is packed with flavour and is easily and quickly made with a homemade or store bought pie crust.
INGREDIENTS:
1 store bought or homemade pie crust
6 eggs
1 cup half & half cream (or whipping cream if you like a richer quiche)
½ tsp. salt
¼ tsp. black Pepper
1 cup cubed ham (we like Black Forest)
1/2 cup halved cherry or grape tomatoes
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
4 tbsp sliced green onions
1 cup thinly sliced fresh spinach
DIRECTIONS:
Preheat oven to 400 degrees. Line the pie crust with aluminum foil and fill with dried beans or pie weights. Bake in the preheated oven for 8 to 9 minutes. Then remove the foil and pie weights and cook for 2 or 3 more minutes, until the shell is starting to very barely colour. Remove from the oven and reduce temperature to 375 degrees F.
In a medium bowl, whisk together eggs, cream, salt, and black pepper.
Layer ham, halved cherry tomatoes, 1/2 of the cheddar cheese, 1/2 of the mozzarella cheese, spinach, and green onions in pie crust.
Carefully pour egg mixture over bacon, tomato, cheese and onion layers.
Sprinkle remaining cheddar & mozzarella cheese over egg mixture.
Bake for 40-45 mins. To check doneness, insert a tooth pike into the center and if it comes out clean it is done. Remove from oven.
Let rest for 10 minutes before cutting and serving.
*Reheats beautifully by placing a piece in the microwave for 30 - 45 seconds.
