EASY CHIPOTLE LIME BBQ RIBS

These ribs are simple, full of flavor, and just the right amount of spicy. The glaze gets sticky and caramelized on the grill, making every bite juicy and irresistible. They’re perfect for a weekend cookout or even a regular weeknight dinner when you want something that actually tastes as good as it smells.  My guys request these ribs over and over again.

INGREDIENTS:

• 4–5 lbs pork ribs, silver skin removed

• 1 (7 oz / 200g) can chipotle peppers in adobo sauce

• 4 fresh limes, juiced (about ¾ cup)

• 1 jalapeño, seeds and ribs removed

• 1 cup honey or agave

• 1 tsp salt

• ¼ tsp liquid smoke

• 1 tsp chili powder

• 1 tsp smoked paprika

• 2 tsp roasted garlic powder(or regular works too)

• ½ tsp cumin

• 1 tsp oregano

• 3 tbsp water

DIRECTIONS:

1. Preheat oven to 350°F

2. Peel the silver skin (the thin, filmy membrane) off the back of the ribs.

3. Blend the chipotle peppers in adobo sauce into a smooth purée.

4. Rub half of the purée all over the ribs.

5. Wrap the ribs tightly in foil and place on a baking sheet.

6. Bake in the oven for 1 1/2 hours, until ribs are tender but not falling apart.

7. While ribs bake, make the glaze:

• In a blender, combine the remaining chipotle purée with lime juice, jalapeño, honey (or agave), salt, liquid smoke, chili powder, smoked paprika, garlic powder, cumin, oregano, and water.

• Blend until smooth. Set aside.

8. Preheat grill to medium-high heat.

9. Remove ribs from foil and place on the grill.

10. Grill ribs for 5–7 minutes per side, basting generously with the glaze. Grill until the glaze caramelizes and ribs have a nice char.

11. Remove ribs from grill, let rest for 5 minutes.

12. Slice between the bones and serve with lime slices, cilantro, or your favorite garnishes.
