COWBOY CAVIAR (Salsa)

A fresh, colourful salsa loaded with black beans, sweet corn, and crisp peppers. Made with vegetables sourced from local greenhouses in the Medicine Hat area, it’s a simple way to enjoy fresh, seasonal ingredients. Perfect with tortilla chips, spooned over grilled chicken, tucked into tacos, or served alongside pulled pork or carnitas. Store covered in the refrigerator for up to 5 days.

INGREDIENTS


• 1 can (15 oz) black beans, drained & rinsed
• 1½ cups corn
• 3 Roma tomatoes, diced
• 2 bell peppers, diced
• ½ red onion, diced
• 2 jalapeños, minced
• ⅓ cup cilantro, chopped
• Juice of 3 limes
• 3 tbsp olive oil
• 1 tsp cumin
• ½ tsp garlic powder
• ½ tsp smoked paprika
• ½ tsp salt
• ¼ tsp pepper

DIRECTIONS

  1. Combine beans, corn, tomatoes, peppers, onion, jalapeños, and cilantro in a large bowl.

  2. Whisk together lime juice, olive oil, and seasonings.

  3. Pour over vegetables and toss well.

  4. Chill 30 minutes before serving.

Serve with tortilla chips or as a topping for tacos, chicken, or carnitas.
